The Iron Goddess is also known as Tie Guan Yin in China. It is one of the top ten Chinese teas. This teas divided into two catergories: lightly oxidised and heavy oxidised. MY Teahouse offers the lightly oxidised Iron Goddess. The taste of this spring-harvested Iron Goddess is more delicate than the one harvested in Autumn.

Making Process | Withered in sun, withered in room, repeat oxidising with shaking many times ,pan-dry fried; twisted in cloth bag, release the leaves, pan-fried; re-do it many times till dry. |

Remarks | It is recommended to have it in warm weather; drinking it 20 minutes after a big spicy/meaty lunch is a comfort. MY Teahouse doesn't suggest drinking it after 6pm. |
Colour: It is a shiny bright green and is also dark green.
Shape: It is a curly and stocky pellet.
Size: 5-8mm in diameter.
Smell: Smells grassy and floral.
Taste: It tastes refreshing, delicate and floral.

MY Teahouse suggest using 85-90ºC rinse the leaves for 2 seconds to wake the leaves up first. Then brewing for about 30-45 sec for the 1st infusion, 45 sec-1 minute for the 2nd -4th infusions, and 1-1.5 minutes for the 5th and more infusions. ( Clay teapot need less time then Porcelain Gaiwan)
